- Makes about ¾ cup.
Ingredients
- 3 Tbsp vinegar, red wine, white wine, sherry or cider
- 1 tsp Dijon mustard
- 1 small shallot, finely minced
- ¼ tsp salt
- ½ cup extra-virgin olive oil
- Black pepper, to taste
Instructions
- Put the vinegar, mustard, shallot and salt in a jar and let it sit for 5 minutes; the vinegar mellows the shallot.
- Add the olive oil and a few grinds of pepper, close the jar and shake hard until thick and combined.
- Taste on a leaf of the salad and adjust: more salt if it tastes flat, more oil if it's too sharp.
